The Brancasi
Novello is a young wine obtained from grapes
carefully selected from the Salento region:
Negroamaro and Malvasia Nera grapes, which have
been macerated by the carbonic method at 100%.
The grapes are placed in baskets and plunged
in special tanks, which are saturated with carbon
dioxide for approximately 10-12 days.
The product is then separated and the process
of fermentation is allowed to begin at controlled
temperatures. A deep red garnet colour is obtained
which has an intense woody bouquet.
This wine is suitable with every kind of meal.
A pouring temperature 20° C is recommended
for the autumn and winter seasons.
